  • 1 whole wheat bread
  • 2 yolks
  • 1 teaspoon of mustard powder
  • 1 tablespoon of vinegar

  • 1 cup of oil
  • 4 tablespoons of chopped cashew chestnut
  • 1 chicken breast
  • 1chopped celery core.
Directions:

Cut the whole wheat bread in 3 horizontal layers. Mix the yolks, mustard, vinegar, salt and oil in a saucepan. Cook it in a double-boiler, stirring continuously with a whisk. Don't let it boil. Remove the mixture from the stove and let it cool. Then chop up the chicken breast previously boiled, add the chestnuts, the sauce and celery. Then fill the bread by buttering each slice and prepare the sandwich. Then cut it in 4.

Jockey Club Sandwich

(4 serves)
  • 1 French stick
  • 2 hard-boiled yolks
  • 4oz of mayonnaise
  • 4 lettuce leaves
  • 2 sliced tomatoes
  • 2 sliced hard-boiled eggs
  • 2 slices of Gruyère cheese
Directions:

Cut the bread in 2. Mix the yolks and mayonnaise in a bowl. Add salt and pepper. Then butter the slices of bread with the mixture. Fill the sandwich with the lettuce, slices of seasoned tomatoes, the hard-boiled eggs and the cheese. Then wrap the sandwich with wet paper and a dish cloth. Cut the sandwich in 4 serves.

Sandwich Marino

(4 serves)
  • 4 slices of German bread
  • 1 teaspoon of anchovy paste
  • 2oz of butter or margarine
  • Lettuce or curly endive leaves
  • 1 small can of tuna in oil
  • 1or 2 chopped hard-boiled eggs
  • 8 prawns
  • 8 tomatoes slices
  • 8 black olives
Directions:

Prepare the anchovy paste, mixing it with margarine, and butter the bread. Put the lettuce or endive leaves on one of the slices of bread. Then drain the tuna and flake it off in a bowl. Add it to the sandwich. Then add the tomatoes slices in the middle and over the chopped eggs. Decorate the dishes with 2 prawns and 2 olives over each serve.

Baviera Sandwich

(4 serves)
  • 8 thick slices of uncrusted brown bread
  • 1 sweet red pepper in oil
  • 2 chopped hard-boiled eggs
  • 1 tablespoon of mustard
  • ½ tablespoon of chopped green onion
  • 4 thick slices of cheese
  • Chopped watercress or celery leaves.
  • 1chopped pickle
  • Bits of hard-boiled egg white to decorate
Directions:

Liquefy the sweet red pepper, together with the chopped hard-boiled eggs, the mustard, chopped green onion until you see a homogenous paste. Butter only one side of each slice of bread. Then put the cheese, the chopped watercress or celery leaves and pickles between 2 slices of bread to prepare each sandwich. When you're finished, decorate each sandwich with the egg white and the pickle left.

Multicolor Sandwich

(4 serves)
  • 5 or 6 thick slices of dairy bread
  • Butter
  • 2 small diced carrots
  • 1 boiled diced beet
  • 2 tablespoons of chopped parsley or watercress
  • Hard-boiled eggs
  • Radishes
  • Black and green olives
  • Pickles to decorate
Directions:

Put the butter and the vegetables in separate bowls and season to taste. Then put the filling layers over one slice of bread and then cover with the other slice. Butter and decorate to taste, skewering the radishes, olives and the rest of the chopped ingredients forming leaves. When serving, cut the sandwich into 4 thick serves.
